Big Announcement/Overnight Oats with Apricots, Walnuts, & Almond Butter

Hi Gourmies!
Before we get into today’s post, I think it’s time I let you in on why I’ve been so busy lately; I am going to Europe for slightly over 4 weeks! 
Kate, Katie, and I will be traveling around: Germany, Austria, Slovakia, France, and Italy. We are meeting up to travel the full duration of the trip with my best friend from high school, Maria, who is from Germany and currently lives in Austria. For the first portion of our trip we will be meeting up with my sister and another friend from high school, Julia, who is in Germany studying the language. 
Hang on- it gets better!
But! Before we go off to Europe, tomorrow kicks off a week in Las Vegas to celebrate Katie’s birthday! Upon our return home to Chicago, we have a full 24 hours before we board a flight to Europe. Eek! I know.
I’m a bundle of emotions right now. I could not be more excited (we’ve been planning this trip for 8 months!), but I would be lying if I told you that I wasn’t some-what anxious. We have a lot of things to get right, and few hours to do so. I hope that I will feel prepared enough for Europe by tomorrow so that I will be able to fully have a stress-free, relaxing week in Vegas. 
At this point you may be thinking, “wow that’s great but, what about us?”. Don’t worry. Those thoughts have been crossing my mind daily, and I assure you I will not neglect you guys. I have a handful of incredible bloggers that are going to help me out here and there while I am gone. 
Yes, that’s right: a guest posting series. 
In addition, I have been working hard to prepare a few recipes and product reviews that will be scheduled to appear on the blog in between guest posts. 
And well, for the rest of the trip? I plan on filling in the cracks myself! That’s right, I’m going on a European vacation, and I’m taking you with me! 
I hope to get on at least once a week to hi, but I am not entirely sure of my access to internet, so please bare with me if it’s not a consistent schedule! If everything goes as planned, the blog will be up and running at least 5 days a week, pretty much how it’s going now. I love you guys so much, and I hope you’ll all be here when I get back!  
I’ll be blogging as much as possible while in Las Vegas, but come July 9th I will be pretty much out of touch and the posting schedule will begin! Eek, I can’t believe it all starts TOMORROW!
On to breakfast (I know, I know… but it wouldn’t be me if after such news I didn’t share a breakfast post with you!).
Overnight Oats with Apricots, Walnuts, & Almond Butter! 
If this sounds weird to you, you need to try this more than someone that this sounds good to. Backwards? Maybe. Just trust me. 
Soak your oats overnight (duh) in equal parts of your milk of choice + water.

In the morning layer one whole sliced apricot in a circle on your oats (as seen below).

Fill the inner circle with walnut pieces.

Top with a nut butter of your choice almond butter.

Optional: pour milk over prepared bowl for a cold, cereal like breakfast.
