Curried Yellow Split Pea Soup

Hello Gourmies,
First off, Steve Jobs passed away yesterday. Regardless if you are a Mac or a PC I think we can all agree that Mr. Jobs was quite the innovator. That may or may not be the entrepreneur degree in me, but in all sincerity I believe it to be true. I always find it very sad when a celebrity or notable person passes away, although I never knew them personally I always feel for their families and for the loss of someone important (or just simply famous) to our society. So say a prayer, have a moment of silence, do what you gotta do, but keep his family and his legacy in your mind today. 
Back to food my loves… 
I’ve got another one for you.

I don’t know if you know this or not but my friends and I are obsessed with painting our nails. We have every OPI, Essie, and Chanel color known to man. We are the kind of girls that go to a salon with the color we want in mind, or at least with the ability to name each color that we pick up or see painted.

So, while the soup was a’simmering our nails were a’glimmering.

Oh yeah.. I went there.

I literally followed her directions, but I changed the ingredients up some. I added more split peas plus some red lentils, and quartered red bliss baby potatoes. I added a cup of nutritional yeast because I finally got some and just wanted to use it. I also blended about 2 cups of the soup to thicken it up for immediate deliciousness. It makes plenty, and therefore it really thickens up in the fridge over time. It is essentially a thick hearty stew. Perfect for the Fall.

Seriously, make it now. It’s vegan (as all of my recipes lately have been), and super healthy and filling. Don’t waste your time on Campbell’s, that’s a joke. This is some legit Indian flavors, packed with a hearty healthy punch. Get to it ladies and gents.
