End of Lago Maggiore and an Intro to Insalata di Polipo e Patate

Today’s post is very near and dear to my heart.

Throughout the duration of our trip we stayed in 5 different countries and visited 6. Out of all countries visited, my good friend from high school and her family provided 4: Hamburg, Vienna, Lago Maggiore, and Switzerland. This family was so wonderful and gracious, I am forever thankful to them.

The reason this post is so special to me is because this family introduced me to my absolute favorite dish of the trip: Insalata di polipo e patate.

Well, and of course because of their hospitality!

Back to the Polipo.

This dish consists of boiled octopus and potatoes, cilantro, a cilantro pesto paste with white wine, salt and pepper, and drizzled olive oil. It’s served cold and let me tell you all the flavors are apparent and wonderful.

The below pictures are a teaser of this dish, because well… I forgot to take pictures of any of the food. Oops. Good thing it was my favorite dish throughout the remainder of my trip. Pictures to come tomorrow I swear. I think you all just need to see the restaurant where it all started for me.
