So, yesterday was gross in Chicago. I woke up to intense rain and thunder/lightening. Luckily, I don’t have to go into work on Wednesdays so I got to cuddle up in bed for another hour! It was wonderful.
Katie and I had made plans to make lunch at home, and the moment she arrived she suggested that the weather called for tomato soup with grilled cheese sandwiches. I wholeheartedly agreed, and we ventured to the grocery store (because my apartment is at the end of our grocery week) while the weather let up a bit. We got there and were immediately (per usual) drawn to the cheese section. It’s getting to be a bit excessive…. because, we decided to make GOURMET grilled cheese sandwiches with three, yes; 1, 2, 3, different types of cheeses. After gawking at the wonderful different cheeses and concocting a plethora of combinations in our minds, we finally settled for what is probably the best three selections for melty ooey gooey goodness: Brie, Muenster, and Cheddar (if I could link cheddar to someone with or without a blog that this cheese reminds me of, I would link it to my best friend, Kate!). The grocery store had coupons for both a Brie and a Muenster cheese, so we picked up the variety with the discount. We had the cheddar at home… because I have to buy it in economy sizes due to its place in my roommates favorite-foods pyramid. Next, we picked up a can of Wolfgang Puck organic tomato basil bisque and then practically ran home.
We got home and started cookin’ and let me tell you… this shouldn’t even be legal. It was SO good.

Are the extra-large pictures too much for you right now? Is that melted goodness just asking you took take a bite out of it? It’s okay, go make one right now.
