Clearly I like to grill. It’s easy, pretty quick, and provides a fun atmosphere in and of itself. There’s really not much more that can be said about it. If you can grill, grill!
I was home in Boston last weekend to celebrate my dad’s birthday with my sister. We decided to condense birthday+father’s day celebrations into one weekend because my sister could make it north from NYC the same weekend that I could come in from Chicago.
My mom and I brainstormed dinner ideas for this particular night and we both decided that grilling sounded good; Hamburgers(veggie burger for one), check; Red Peppers, check; Sweet Onion, check; Eggplant, check; Portobello Caps, check.
Do you see the corn and that huge tub of potato salad? That would be my dad. He’s an all American boy from Maine and requests these two items at every. single. barbeque. He also douses his food in salt and ketchup. Don’t you worry, his cholesterol is perfect. He’s an anomaly… in really more ways than you know. Love you Dad!!!
Moving right along.
To grill vegetables like seen below, and mentioned above, cut your chosen veggies (summer squash, zucchini, and asparagus are excellent grilled too!!) in thick and long enough pieces so that it can withstand being cooked on the grill itself. Drizzle a little bit of olive oil (or oil of choosing) on both sides of each piece and simply salt and pepper each side for seasoning.
Add to the hot grill (a little bit before the meat if you are grilling meat as well) and cook thoroughly on each side. Cooking time really differs depending on each veggie so just watch them until each piece gets good grill marks and becomes rather limp.
