Happy New Years Eve Everyone!
If you follow me on twitter, you may have seen my tweet about kombucha and champagne for tonight. Tonight is about staying up late and ringing in the new year with lots of bubbling drinks. If you’re anything like me, you love champagne but can drink it like water. For me sparkling water is the ultimate refreshment, and I think the carbonation of beverages helps me feel quenched. Hence, my love affair with kombucha, my ability to drink champagne like water, and my craving for sparkling water when I’m feeling less than hydrated.
Luckily for me kombucha is an ancient elixir made famous for its undeniable health benefits. Although nothing has been scientifically proven, I don’t think you can argue with the human experience. In my opinion the best part of kombucha is the fact that is is a living organism. Kombucha is made from the S.C.O.B.Y. or the symbiotic colony of bacteria and yeast. What does this mean? This drink provides healthy probiotic bacteria that nourishes our digestive system. It also means that it is one of few vegetarian/vegan sources of Vitamin B12. Another benefit of drinking kombucha is for its detoxification abilities, and the most commonly touted benefit is it’s ability to provide energy. Yes, yes the placebo effect is something to consider with some of the claimed benefits such as more energy, but just try the stuff for yourself and tell me if your body feels better afterwords.

One of the many things I loved about my culinary school, The Natural Gourmet Institute for Health and Culinary Arts, was how our instructors were so multi-faceted. One of my instructors, Chef Rich, has been brewing his own kombucha for years and taught an after school class on how to brew your own exceptional home made kombucha. I purchased a starter kit from him at school, and have that batch brewing in NYC, and Ethan gave me another starter kit for Christmas- so I have one going here in New Hampshire.
Unfortunately, my NH kombucha is still in the fermentation process, and no where near close to the effervescent quality I prefer. Don’t worry though, I’m heading out after I submit this post to pick up a case of my favorite brand.
I’m picking up a few plain originals and a few citrus. One of my favorite flavors is GT Dave’s Multi-Green because of it’s chlorophyll- another of my favorite nutritional powerhouses, more on that later, though. . It’s very green, so I recommend starting on a fruity flavor or the original before you jump into the Multi-green.
Anyway, join me tonight in nourishing your body in between sips of champagne. It’s a delicious way to keep yourself hydrated and energized. You’ll thank me tomorrow…
