Cub extra firm tofu, and pat the surface dry. Add salt, pepper, and Italian seasoning. Spray your baking pan and throw into the 350 degree oven.
After 20 minutes turn your tofu and add additional seasonings. Cook for another 20 minutes.
Steam vegetables of your choice using the method of your choice. I steamed my veggies over a pot of water, but because the vegetables were frozen they were taking too long to cook… so I ended up throwing them in the microwave to defrost and cook the rest of the way.
Cook barley, or hearty rice of your choice according to packaging directions. Rice typically takes longer to cook so make sure that you time your rice and your tofu baking time.
Season with salt, pepper, and nutritional yeast. Serve and enjoy!
