As you know from yesterday’s post, it was a beautiful day in Chicago. Now, I don’t know about you but for me, the gorgeous weather brings my appetite for a fresh and delicious dinner. Can we all agree that a caprese salad not only fulfills but defines both criteria? I’m so excited to finally make this dish!
All you need is:
Heirloom tomatoes; one medium size made 8 good size pieces, and was more than enough for 3 girls.
Mozzarella cheese; I purchased one container with 3 small pieces, and used 2 full pieces. The thickness of the cheese is most definitely a preference…. and as you can tell we ‘luhv’ cheese.
Fresh basil leaves; one per slice
Pesto; this can be optional if you add olive oil and basil
Balsamic vinaigrette; this could be optional… but is really not. So my best advice (speaking especially for Katie) is to have each diner add their own to his or her own preference.
The way you build the salad is totally up to your own creative preference! Sometimes I add the layers sideways, stacked like fallen dominos. Sometimes I add them as seen below with pesto between the tomato and mozz. Seriously, have fun with it, the way you stack will not change the taste!
