Today’s post is something I made for the first time about a month or so ago and had only briefly mentioned. Today, with the second batch made, I want to revisit the recipe! Laury specializes in vegan desserts, let me tell you. So one day when I was craving a healthy dessert I scooted on over to her lovely dessert page and picked an obvious one: Almond Butter Cookie Dough Balls.
I didn’t have carob chips so I had to improvise and use Ghirardelli 60% Cacao Bittersweet Chips and grind them in the food processor. Done and done.
Other than that little hiccup, this process is honestly so simple. All you need to do is put all the ingredients together in a bowl and mix by hand. No strategic or specific process here, just make sure to let them sit in the fridge before serving!
