Look What’s Sprouting Over Here!

How are you all doing today? Notice any changes? Any rerouting going on? How do you like it?

Anyways, sorry that I haven’t been around much lately. I know that I mentioned how crazy senior spring was getting, as I am sure you can imagine. It turns out that it has been even crazier and more stressful than it was but for entirely different reasons, more to come on that in future posts I promise.

Today’s featured meal is a gigantic salad that I have been making a lot recently. One reason I wanted to share was for the sprouts on top. The second for the dressing.

How many of you cook or garnish with sprouts? Did you know that it is a nutritional superfood? The process of sprouting seeds and beans opens up and increases the nutritional benefits that a full sprouted vegetable would provide our body, while making it even easier for your body to digest. Not only to essential vitamins, fatty acids increase, but minerals work over time to create more potent forms of protein and fiber. For instance, protein increases a bit, and fiber increases 3x the original amount… all in those tiny little sprouts!! I mean, okay, sign me up.

But there is a catch. The process of sprouted is actually dangerous too! During the sprouting period there is ample opportunity for harmful bacteria to grow. This little fact has actually been responsible for the decrease in the sprouting industry.

Luckily, there is hope. A few companies are working to manufacture sprouts in the most perfect way. Two brands that you will see at the grocery store are Brassica Sprouts, and Sandra’s sprouts. Check them out and start adding an extra nutrient punch to your salads, sandwiches, and other yummy dishes.

Another item of my salad is really the king here. Annie’s Lemon and Chive dressing. HOLY YUM. I am obsessed. It is a creamy dressing that is totally vegan. I can’t wait to explore all the fun things that this dressing can create and jive up. It would be perfect with roasted or cold potatoes, as a dip to raw veggies, added to tofu (or tuna, chicken, salmon, etc.) salads. It is seriously amazing. Next time you see this bad boy in the dressing isle, pick it up. I promise you will not be disappointed.
