As you all know last weekend was my beloved roommate Missy’s 22nd birthday! Today’s post is a recap of her actual birth-day brunch that was on Sunday. I had wanted to do this for a while but I had only received the O.K. from Missy that she would be around that morning the night before. Other than a mind full of jumbled ideas, I had nothing prepared at that point. The next morning I slept in later than I would have liked, but got myself to the grocery store and back around the time I told Missy to be ready. I put a 30 minute delay on brunch in order to get everything situated without being too stressed, and that turned out to be just perfect. I cheated on a couple of the steps (aka bought a few items packaged…) but made buttermilk pancakes from scratch. Sorry for cheating, but sometimes you need to improvise and all in all everything turned out better than expected!
In the mix: Buttermilk Pancakes, Cinnamon Rolls, Homefries, Fresh fruit: watermelon, banana, blueberries, raspberries, strawberries, & blackberries.
While breakfast was finishing up, Missy and Kate prepared Mimosas.
