Part of my New Years Resolution is to have well rounded meals at every meal… even snacks. What does well rounded mean? Basically having a protein, carb, veggie AND fruit every time I eat. For example if I’m having cereal or pancakes with fruit for breakfast I will have a V8 juice on the side. No fruit but yes on the veggies? Have a small glass of 100% fruit juice.
So anyways, I wanted to have a veggie snack after my mom, sister, and I got back from our long walk/hike downtown. I decided to make some easy broccoli and cauliflower. Roasted..yum.
What You Need:
-A frozen bag of steam ready broccoli and cauliflower (you can use two bags considering they never put enough veggies in a bag and you can never have enough veggies… it makes you wonder doesn’t it?)
-Red Pepper Flakes
-Garlic Salt or some sort of meat salt/seasoning
-Optional: Hummus for dipping
What You Need to Do:
-Heat the oven to 425
-Put a piece of tinfoil or spray non-stick cooking spray on a cookie sheet
-Heat the frozen bag of veggies in to microwave according to the least amount of time (4 minutes probably)
-Spread the broccoli and cauliflower on the cookie sheet and dab with a paper towel to remove access moisture
-Sprinkle with all seasonings, the amount to your liking
-Cook for 15 minutes, rotating each piece half way through baking time (or until desired doneness… longer for more crispness)
I served my dish to my family with a little hummus (spinach and artichoke flavor) for dipping.
