Happy Thanksgiving Week All!
I can’t believe the Holiday season is already here and ready to go!
Today’s post is a little something I whipped up the other day.I found it to be absolutely delicious, and decided I needed to share it with you guys.
What you need:
Tofu, cubed and dried
Salt + Pepper, to taste
1 tsp. Italian Seasoning
1 tsp. Garlic Salt
1/2 tsp. Red Pepper Flakes
3 Tbs. Nutritional Yeast
1/4 cup Vegetable Broth
1/4 cup Sun-dried Tomato
What you need to do:
In a medium-large saute pan spray or de-stick with whatever method of choice you prefer. Bring to medium-high heat and add your tofu. Add about a 1/2tsp. to a full tsp. (depending on your taste preferences I always tend to add more of garlic salt, salt +pepper and a little less of everything else) of every seasoning except the nutritional yeast. Cook the tofu on each side for about 7 minutes, more if there is a lot of moisture still in the tofu.
After 15-20minutes of cook time, add your vegetables. Turn down the heat to medium-low and put a cover on the pan and let the vegetables steam in the pan. This will take another 10 minutes or so. Stir occasionally to ensure the veggies down stick to the pan.
After everything has cooked, add your broth and nutritional yeast. Stir and let sit to thicken up. Add more yeast if it remains too liquidy.
Add your sun dried tomato at the end, and heat to your liking.
Serve and enjoy!
