Sweet Potato and Lentil Chili

Today’s the perfect day to make the recipe I have for you. Seriously. It’s festive, it’s hearty, it’s healthy, it’s delicious.

We used this recipe exactly, but instead of green lentils we used orange (not red) lentils. They keep their texture much longer so you can ensure a slight crunch to them well throughout the leftovers you’ll have.
We also added one can black beans and one can kidney beans. Definitely worth the addition. 
I ended up adding another 2 cups of veggie broth because we used the remainder of my lentils which was probably an extra 1/4 cup, and plus the beans equated to a need for more liquid!
If you find yourself in this pickle without an extra thing of broth, water works too!!
