The Kats Meow Presents: Pink Lemonade Cupcakes

Hi Gourmies! 

I am Katherine and I blog over at The Kats Meow! Where I rant on and on about my life and sometimes throw in some recipes for you. 
When Jenn asked me to do a guest post I was so excited; one because it would be one of my first guest posts and two because I could share a recipe I had been dying to try!! I read The Gourmetour constantly and not just because Jenn and I were really good friends in high school, but because I love her writing style and how informative she is about things. Her restaurant reviews are probably one of my favorites even though I don’t live in Chicago so I am not sure when the chance to visit these restaurants will happen. So ladies and gentleman I give you PINK LEMONADE CUPCAKES! These cupcakes were very good and definitely tasted like pink lemonade, it was perfect for a summer day. The only problem I had was they didn’t raise enough, but I may not have put enough batter in each cupcake. 
Ingredients:

CUPCAKE: makes about 12 cupcakes
2 drops of Red food coloring (more if you want it more red than pink)
1/3 cup Pink Lemonade Concentrate (the frozen kind, of course unfrozen)
2 eggs whites
1/4 cup vegetable oil
1/4 cup buttermilk
1/2 cup granulated sugar
1 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
FROSTING:
1 stick butter
2 tbsp. pink lemonade concentrate 
3 cups and 3 tbsp. of confectioners sugar
red food coloring
Steps:
CUPCAKES:
Step 1: Preheat oven to 350 degrees
Step 2: Mix all wet ingredients in a large mixing bowl
Step 3: In a separate bowl combine all the dry ingredients
Step 4: Combine all the ingredients together with 2 drops of red food coloring
Step 5: Mix together until smooth
Step 6: Pour batter into cupcake liners (about 3/4 full – this was my problem I believe)
Step 7: Bake about 20 minutes, once down remove from pan to cool
LEMONADE FROSTING:
Step 1: Once cupcakes have completely cooled combine all frosting ingredients into bowl 
Step 2: Mix all ingredients until light and fluffy (add more lemonade if necessary)
Step 3: Once frosting is fluffy enough, using piping bag or ziplock bag and decorate the cupcakes with frosting
Step 4: When done, eat and enjoy!
